Light & Easy Roasted Pepper & Tomato Soup

I whipped up a batch of my snazzy little go to soup for when I need something relatively quick, healthy, and light last night! I am a huge fan of soup, especially home made soup because I like being able to know exactly what is going in and how much. This soup is super easy and so tasty. It also tastes really good when you put grilled cheese croutons on top!

I wish I had a real recipe to share with you guys, but I truly don’t because it can change each time I make it depending on what I have (or don’t have) in the fridge! The two main things that are ALWAYS in are tomatoes (fresh, or canned, or like last night I had to use a combo of both becauase we only had 3 tomatoes on hand and I normally would put about 6), and peppers (red is my favorite in this soup, but I also use yellow and orange.. I love eating the rainbow!)I will give you my guidelines and let you roll with it.. Check out the gallery for step-by-step photos!

To make the soup:
Place veggies on baking sheet, sprinkle with olive oil, s&p, and roast in the oven for about half an hour. If I am pressed for time and don’t have a full half hour, I will just toss them under the broiler for a few minutes.. I find it helps to get the juices flowing and really enhances the flavor! Once your veggies are all roasted, place them into the Vitamix (or whichever type of blender you are using).. Add water or stock (I like veggie, or chicken) until the veggies are completely covered. Blend away!!!!… Once it is done blending, you have some options.. and for me it totally depends on the day, mood..time.. just what I am feeling that day. If you have a Vitamix, you know well that you can blend until hot and ready to eat. If I am adding cream or milk then I will normally blend it all up, taste, add the cream, and give it one last quick mix. Sometimes I will transfer it back to the stove to add the cream, and other seasonings.. mostly if I am not in a hurry and just want to let it simmer away for a little while.. And sometimes I don’t add any cream at all.. this just makes it taste a little lighter and helps to cut some fat and calories…
