Spaghetti Squash Lasagna Bowls Recipe! – Sneaky Swap Out #1

Hello lovelies.. I posted a picture of this while in a food coma and whewf! Just slipped right out of the head! Anyway, these are DELICIOUS! and I don’t just mean like.. oh.. these are pretty good.. i mean like.. GET INSIDE MY MOUTH RIGHT NOW! I find that these are good to do for groups because you serve it right in the squash, and can make everything in a larger quantity as you go.. then build them all and toss them in!.. And I also wouldn’t ever tell someone to tell a lie.. but if you tell your kids this is spaghetti lasagna, they may never know the difference, and your secret is safe with me! 😉 This is something I like to call.. the sneaky swap out!

I apologize for the lack of pictures with this one! I was in a rush to make them, and they were being swiped from the counter faster than I could get a shot… hence the fingers and toes that have made their way into the photos!

Spaghetti Squash Lasagna Bowls

We start with prepping and cooking the spaghetti squash – Cut the squash in half and brush with olive oil, and season with salt and pepper. Place face down on baking sheet and bake for 40 minutes at 375F (until soft and comes apart like spaghetti).  Take out the insides and set aside.

Next is going to be your cheese layer – Grate some mozza cheese. Honestly, I don’t measure, so I don’t know how much.. just however much you prefer.. just don’t go overboard! Then take about 1.5 – 2 cups of cottage cheese and mix these together until creamy. You can also season this mixture however you like.. as per usual.. I change it up.. but salt & pepper are always a safe bet!

Lastly, we prepare the tomato meat sauce – How much you need depends on how many squash halves you’re making, but if it’s a normal weekday dinner, I make extra because I love having leftover meat sauce in the fridge for a easy lunch or dinner option during the week! Again, personal preference on the type.. You can use a jar you bought, make your own, even add spinach (or other veggies!) if you like!
Now, back to the empty squash halves. Line up all your parts & layer those puppies up! Like this: Sauce, noodles, cheese mix, and end with a layer of sauce.

Bake at 375F until kinda bubbly.. about 20 min or so and take it out of the oven.. now, change your oven to broil and put a thin layer of mozza on top – again, I don’t know how much, just be reasonable!.. Toss under the broiler until golden and bubbly.
