Get ready to take a walk on the sunny side!

First, let’s chat about eggs. They are so easy right? Buy them by the dozen, last for a while in the fridge, and are totally versatile. Baked, broiled, poached, scrambled, boiled, sunny side up, over easy. While they are always good in the morning, I am guilty for loving to have breakfast for dinner. The list on the ways to use eggs is endless. I am not even going there. They taste delicious and are a go to for many families! While I do not have children of my own, I am all about educating kids on the foods they eat, and involving them in the kitchen! A healthy lifestyle is a more obvious choice if our children grow up aware and educated on the things they put into their bodies! Eggs are a fairly low calorie choice, and contain vitamins and minerals.

On the flip side.. Eggs do tend to get slack. Firstly, the inhumane conditions of mass production (which is something that I totally understand, and do not condone or promote). Secondly, the nutritional value of eggs can be somewhat confusing. Are they good for us? Or aren’t they? Well.. opinions differ, but facts are facts. So, let’s just be honest..

The way that the animals are raise truly do effect us. What they eat, and how they live in turn, goes into our systems. From over crowding and lack of free movement, to the use of antibiotics, stimulants, steroids, or hormones, researchers do not know the long term effects that eating the animals raised in these conditions will have on us. To be on the safe side, I recommend choosing a free-range, natural or organic option. This way, we know that they were raised eating non-chemical food with the antibiotics, stimulants, steroids, and hormones left out and that they were free to move around and get the exercise they need to grow healthy and happy. Happy chickens means happy eggs! (And to be clear, this applies to all mass production of all animals, not just chickens! If you choose to eat animal products, be sure to buy organic whenever possible!)

So are they good for us? I get this question a lot because yes, they are high in protein, but they are also high in cholesterol. Research suggests, if your regular diet is not high in fat, then eating eggs on the regular does not greatly raise your total cholesterol. But, there is a catch.. if you have a cholesterol problem, or cardiovascular issues, any foods that contain fat should be only consumed after careful deliberation. Okay, with my little egg rant out of the way, we can get to the reason you came here.

Egg Clouds, as I call them, although they do have other names, you guys they really are a fun option to jazz up your morning. They are also kid friendly – just make sure an adult is supervising around the oven! They are very easy to make, and can be personalized however you, or your kids prefer. You can make a small batch, or large batch. I find they are awesome when cooking for company because it can sometimes be hard to cook eggs for a large number of people, and have them all done at the same time! Plus, it’s always fun to serve something a little different!..So let’s get started.

EGG CLOUDS

WHAT YOU NEED:
Eggs
Grated Cheese
Extras: Chives or green onion, bacon, small sausage pieces..etc.
Ground pepper (+Sea salt if you like)

NOTES: *The quantities for the above ingredients will vary on how many eggs you are making, however – If I am using 4 eggs, I use approx 1/4 cup of each extra – up to about 3/4 of a cup in total, but go by personal preference if you want more or less of one of them. I also recommend using cheese that has a lower moisture % so that it doesn’t make the eggs runny. Any extras that I add in, besides the grated cheese, I cut into a very fine dice, technically called “Brunoise”

WHAT TO DO:
*Preheat your oven to 450 degrees. Line a baking sheet with parchment paper.

1.Separate your egg whites from the yolks. When you do this, put all whites into a large bowl, and your yolks into SEPARATE small bowls, making sure to not break the yolk as you are separating.

2.Next, whip your egg whites until stiff peaks form.

3.At this point, fold in your cheese and extras.

4.Spoon your egg whites onto your baking sheet, and create a little divot, or well, in the middle of each mound.


5.Bake for 3 – 4 minutes. Remove from oven.

6. Carefully add an egg yolk to each divot/well.

7.Season with pepper (and sea salt if you please)
8.Bake for 2 – 3 minutes, or until the egg yolks are set. – Keep an eye on them so they don’t get firm, unless that’s your thing!

QUAY AUSTRALIA: REVIEW

You guys! I have to tell you about these sunglasses! Now, I am sure you have probably all heard of them by now because their latest collab is with Kylie Jenner, and anything that girl touches blows up big time, and they have been seen on the always gorgeous Gigi Hadid, but in case you live under a rock.. you need to be checking out Quay. They are killin’ it right now. I just wanted to share about my experiences with them! I stumbled upon them when I was needing new sunglasses, and too lazy to drag my butt to a store to get them. Yes. The level of laziness reached new heights that day.  I was scrolling around online and saw a photo of Gigi Hadid in the Cafe Racer style. I loved them, and immediately thought, oh god.. they are probably like so expensive, some high end brand that no normal person can afford, and I will never own them. After some quick online investigating I found out that they were made by Quay. (Pronounced “key”) I headed over to their website, after checking them out on Instagram of course. I was pleasantly surprised! Their prices are seriously decent! They are mid-range.. roughly like $50-$100 a pair. So I mean.. they aren’t outrageously expensive, but they certainly are not your $5 gas station specks either.

I poked around and decided that I wanted to try 3 styles.. French Kiss (Clear/Rose), Santa Fe (Rose/Pink), and Cafe Racer (Black/Smoke).  – They happened to be sold out of the Cafe Racer in the color that I wanted.. but luckily Nordstrom had my back on that pair 😉

They ended up shipping out within a couple of days, and arrived to me about a week later, which isn’t so bad for delivery to the other side of the world. When they arrived I felt like a little kid on Christmas morning!

All 3 pairs arrived in great condition, and in a soft pouch case! They are not metal frames like they kinda appear to be in the photos but they are pretty good quality regardless, so I don’t let it get to me. They are nice and light, but not so light that you feel like they may crumble apart at any moment. If you have bought cheap sunglasses in the past, you know what I am talking about.

Okay, a quick rundown of each pair and I’ll let ya get on with your day…

French Kiss: I love these!! Like.. I don’t know what else I can say other than: They. Are. Awesome! I chose the clear/rose ones and I am so happy that I did. They have become my go-to glasses. I love how they can be worn casual, perfect for a lunch date, or you can easily dress them up if you are off to a wedding or event! They are extremely versatile and every one that I have shown them to has asked me if I will let them have them, or if they can buy them from me. No. and no. but if you want to get your own pair, you can do that riiiiiiiight… here.

Cafe Racer: Let’s be real. These are the shit. They are bold, and loud, and in your face. The best hangover sunglasses. Put these on when you wanna give life the middle finger, and be in your own world. Or, put them on when you want to be bold, and make a statement. Just put them on, okay? You’ll fall in love. They cover basically my whole face, which I am totally ok with, and bonus! They don’t weigh a ton. Which is nice! Nothing like your face hurting because your sunglasses are so heavy, especially on a hot sweaty day. Ugh.. no thank you! If you wanna jump on the bad bitch train you can buy your ticket …. here. (In case you didn’t get my sarcasm, you’re not actually buying a ticket to anything.. it’s just an expression..and i sort of cant believe i have to explain that lol!)

Santa Fe: If I am being totally 100% honest with you.. they are my least fav of the bunch..on me. I still do like them, but they are obvi too big for my face.. and so I don’t feel completely at home in them. I still wear them anyway, because they are super cute, and I do receive compliments on them (not to toot my own horn or anything! LOL!) so they must not look as awkward as I think. I do love the color, style, and the idea of them. They are always in my bag as my backup pair… just in case! These will honestly go with anything. Get yo self some.. here.

#ADAGIOTEA | The Zodiac Series: LIBRA

Okay, I don’t really know how to explain the relationship I am currently growing with this tea, but I feel… You know how people say that when they find “the one” that they just know. Like someone will ask a married woman, oh when did you know that he was the one for you?.. and they say.. oh i just knew. That is exactly how I feel about this tea. I know, it’s ridiculous. But it just gets me. I knew it from the moment I opened up my package, and found this little tin box staring back at me. And get this! The picture on the tin, is a girl.. with pink hair.. in pigtails. How. Did. They. Know?! *shifty eyes*

Seriously, let’s get down to business. The tea I am talking about is this one right here. It’s LIBRA from The Zodiac Series, by Adagio Tea. The Libra tea is a black tea backed by chocolate and strawberries, with a hint of rose and cream. Steep at 212° for 5 minutes is what they recommend on their website, however it can be hard to adjust for the temperature depending on where you are making your tea (like at the lake!). I just keep an eye on it, and it usually takes about 4 minutes for my preferred flavor.

The smell of this tea is quite honestly one of the best. I can be having the worst day.. come home, smell this tea, and it’s like my whole body just relaxes. They should think about making a body spray in that scent blend. I want to bathe in it. Oh wait.. maybe I should try that! – Stay tuned lol.

The first time I made this tea, it wasn’t even half way done steeping and I was already sold. It’s romantic. It’s kittenish. And it’s the perfect dessert tea. Yes, I know, we all love and want dessert every single day, but that’s not good for anyone. Now, it doesn’t matter! This tea is so perfect for after dinner that you won’t miss out. I really enjoy the strawberries and cream feel it has, and the rose with the cocoa nibs are a good addition to balance it out. It’s sweet, but not too sweet. It’s rich, but not too rich. Yet, light. I prefer to drink it straight up – some people like to add cream and sugar (or honey) to it. I have also heard that this tea makes a killer latte. Have not tried it yet. Imagine it would be amazing. I will get back to you on that.

The price point on this tea I find not too bad either. A 4oz tin is $9, while a 16oz refill bag will getcha for $29. I should also mention that Libra is a part of their Zodiac Elements: Air package, which also include Aquarius, and Gemini.

This tea has easily made it into my regular rotation. It has become one of my most favorite go-to’s. I had just found out about Adagio Teas recently, yes I live under a rock, but if this is just one of the first ones I have tried, I can not wait to taste more!

“AH-DA-GEE-OH” – Say it with me now.. AHHH-DAAA-GIO.. and get used to saying it because after you get you some of what they are offering… you’ll never look back. I know I haven’t! Okay, let’s get serious.. I am talking about ADAGIO TEAS. If you haven’t heard of them, now you have. They recently reached out to me and I am so happy that they did. I don’t know if I live under a rock or something, but how I did not know of them sooner is well beyond me. I received my package of choices I had made and upon arrival I was impressed. I must say that when I pulled out the Libra tea – and it had a picture of a girl with pink pigtails on the front – I knew it was meant to be. I mean, it’s basically like looking in the mirror! 😉

I have spent the past few weeks putting these teas through all my tests! Drank them hot, drank them cold, incorporated them into recipes, smeared them on my face and used them as a mask, and I even have a tea party planned so I can share them because they are too good not to.

Over the next couple of weeks I will let you in on what I have been up to and more about why I have fallen in love with this company, so stay tuned! Stuffed Burgers

Let’s chat about stuffed burgers, shall we? I am a huge fan of burgers – especially if they are a REAL burger.. made with REAL meat.. and by a REAL person’s REAL hands..Elk, beef, bison (well ok, nothing beats bison).. are prob my top 3 for what to make a burger from. And it’s not just because I have an avid hunter for a father who fills my freezer with delicious meat all year round. I know, I am spoiled. You can hate me later. And then, after you make these burgers, you will unhate me. It will all work out in the end.
I have heard these burgers called lots of names, from Jucy Lucy at Matt’s Bar in Minneapolis, (also spelt correctly “JuIcy Lucy” by the 5-8 Club down the street from Matt’s Bar in Minneapolis), to Juicy Nookie, to Mary Shelley (author of Frankenstein).. but let’s just be honest, they are all a stuffed burger.  And while I have tried the Jucy Lucy at both the 5-8 Club, and Matt’s bar and both were GREAT! (Even President Obama had a Juicy Lucy at Matt’s Bar in 2014!).. Sometimes I just can’t drive for 8 hours and cross a country border just for a burger, so during those times, I make them at home! I have yet to find a local fav – so if anyone knows of a good one in Winnipeg, get at me!
For your patties:
  • Meat – Beef, Bison, Elk – whatever makes your stomach smile.
  • One Egg – or two if you are making a big batch!
  • Bread crumbs|oatmeal|crackers|chips – something to hold it together – I like “original” Potato Chips – These aren’t meant to be healthy – They are meant to be DEEEEEELICIOUS!
Stuffing options:
  • Cheese (any kind that you prefer – cheddar, old, feta, blue, mozza)
  • Jalapeños
  • Prosciutto
  • Bacon
Roll out your patties fairly thin, but not so that they have holes! – Once they are prepared, lay one patty down, then place the stuffing on top and in the middle. Place another patty on top of that.. Put a plate over the patties and press down, then go around the edges and make sure that they are pinched together the whole way around so that the stuffing is sealed in! Get those babies on the BBQ or even just cook in a pan on the stove top (If you are doing that you may want to put a tbsp of water and toss a lid on for a couple min to give it a good steam – You want to make sure it is cooked through so that you know your cheese in the middle is all melted and gooey.. (unless your American and like it pink in the middle – not my thing, but it’s not my burger, it’s yours, so who cares what I think!)
This is a great burger to make when you’re having people over for a BBQ! Your guests will think they are getting a regular burger, until they take a bite!
**Please do make sure you warn them before they bite into it though, you don’t want them to get burned by the melty cheese – I learned this one the hard way! 😉
Top these beauts with all of the regular burger toppings that you all love so much – try my Delicious Peppercorn Mayo  (my fav!!),  raw or caramelized onions, bacon, cheese (yes, more cheese), fried egg, coleslaw, tomato, lettuce, pickles, banana peppers, jalapenos, condiments – really the options are endless, and it really is a personal preference!

FISH OR CUT BAIT 

Fish or cut bait, shit or get off the pot, put up or shut up.. however you say it, it boils down the same. And it could not be more true at this moment. There’s so many loose ends and unfinished business in my life right now, and it’s starting to drive me crazy! I’ve reached my breaking point with it all, and I finally decided it’s time to fish or cut bait.

Do you ever have these times in your life, where it feels like you just have so many things up in the air, half way done, drowning in whatever it is, feeling so overwhelmed (by nothing important), but really getting no where. Or you have an idea, but it never really becomes more? I hate that feeling. And I have had it constantly lately.. it’s just time to figure it out. Make the decisions. Put things into action – or just give it up and stop wasting my time and energy.While I have a ton of ideas that I would love to drop everything and dive in, it’s not always that easy. It’s not like I can just quit my day job, and say “Here I go, off into adventureland, hopefully something works out!” – I mean, as much as I dream about doing that Every. Single. Day. I’m not brave enough for that – yet. Bills still have to be paid, bellies need to be full, and I have to go to my 9-5 job, each and every day to make that happen. So, for right now I have to work out the kinks, and figure out how to make it all work for ME. But, let’s hope that some day I become brave enough to say fuck it, and go on that adventure!
For now, I have so many projects  and goals that are half way there and that I need to give more attention to, or chop all together. The feeling of having some not completed or figured out, gives me stress. And the longer it goes on for, the worse the stress gets! I can’t make a good, clear, well thought out decision with a cloudy, stressed mind! However do all the decisions we make need to be clear, correct, and well thought out? I doubt it.
My major tasks up on the air right now – I’ve got my nutritional studies (with a due date looming over me), my 9-5 job (which is not my career, won’t be forever, but is it really what I should be doing with my time?.. I mean, I guess so.. if I want to be able to eat or have a place to live, plus I do enjoy what I do most days), my blog (which has been creating a lot of really great opportunities, but still, I feel like I can’t keep up with it).. the candle company (which, omg is probably my number one cause of stress.. after the other three things I listed of course! Ha!)

So – to start I have to make a decision about every single goal I want to reach. From big goals like my blog and the candle company – to small goals like drinking enough water, getting enough sleep, eat healthy, or exercising to lose 10 lbs..I’ve got to prioritize, plan, actually put in the work to making them a reality. I can’t go around saying, I write a successful blog, unless Im actually doing that (although it already has become more than I thought it would.. so small win!), I can’t say that I am a Registered Holisitic Nutritionist, unless I actually become that. I don’t want to be that person. The one who constantly spouts off all the things they are great at, or that they have created and accomplished, and really it’s just a bunch of bullshit. I want to actually do them. I want to bring them to life. I want them to be successful. And none of that is going to happen by just thinking about it. I have to make myself accountable. Time to buckle down, make the decisions, and get the ball rolling!

My throwback Thursday is back to my high school days! Cheerleading, dance, choir, and music were my life.. when I wasn’t busy driving up and down Main Street in that sweet Sunfire Convertible! Ahhh.. those were the days! #WhenIWasSkinnyAndThoughtIWasFat
