I love zucchini. Grilled. Roasted. With parm. In noodle form. In chili. In soup. The list could go on. I love that it can be hearty, or light.. and that no matter what, it always feels “home-y”. Call me crazy for saying zucchini is comfort food.. but I am not going to change my mind…
